Allergy-Friendly Friday, on a Friday?  Oh my, what a novelty!

Thanks for your patience while I struggled to get back from Iowa.  Wow, are those corn fields gorgeous. Such a tragedy that the drought is killing off so many. Though, I couldn’t help but feel a chill as I looked at mile upon mile of what is surely GMO corn.  So beautiful, but silently dangerous. What are your thoughts on corn, and particularly GMO corn? Let me know in a comment, if you like. I’m curious.  And if you are intolerant, or allergic to it, how does it manifest?

    Corn is a tricky thing. Up until recently we avoided it and derivatives because my daughter tested positive in her blood and prick tests for a corn allergy. It was one the allergist suggested trying periodically to see if she stopped getting rashes from it (a pretty low grade allergy to start) and we are just now able to eat corn products. Now, with that said, I am still avoiding corn where I have a choice. Corn tortillas or a corn on the cobb makes more sense to me than a candy that is just all corn syrup. I also am hesitant to introduce too much and then have to backtrack so I still use our authentic foods corn free xanthan gum BUT I am able to buy boxed enjoy life cookies for the kids now that we’re not worrying about corn and grape for my daughter! I learned during this journey that corn is even in citric acid or household products like bleach so it is scary to see what the impact of industrializing a farm product is. I respect farmers, I do, and corn is not “bad” inherently, but as a parent and a consumer I’d like more disclosure for corn products so I can make decisions about GMOs, etc. Sadly lobbyists have a bigger part in regulatory decisions than the rest of us.     Hi Cybele! We love the Whole Foods Allergy Cookbook. Do you have suggestions for replacing Barley Flour since we cannot use it. My son is allergic to almost all the top allergens. Thanks again for all your recipes!!!

      Hi Savita:

      THanks for your comment. Do you have my Allergen-Free Baker’s Handbook? You can use the flour mix from p.19 and add about 1/4 teaspoon xanthan or guar gum per cup of flour, one for one in any recipe I do the oat/barley mix. You can also sub Millet for Barley in many cases. What recipes are you trying to make? I can help further if you let me know.
